Silence GRPC logs unless our log level is debug
GRPC is logging a *lot* of garbage at info level.
This configures the GRPC logger such that it is only giving us logs when
at debug level and also adds a log field indicating where the logs are
coming from.

containerd is still currently spewing these same log messages and needs
a separate update.

Without this change `docker build` is extremely noisy in the daemon
logs.

daemon/config: New(): initialize config with platform-specific defaults
This centralizes more defaults, to be part of the config struct that's
created, instead of interweaving the defaults with other code in various
places.

cmd/dockerd: un-export config methods, and don't pass flags "twice"
- un-export `daemonOptions.InstallFlags()`; `daemonOptions` itself isn't exported,
  not exported, and `InstallFlags()` isn't matching any interface and only used
  internally.
- un-export `daemonOptions.SetDefaultOptions()` and remove the `flags` argument
  as we were passing `daemonOptions.flags` as argument on a method attached to
  `daemonOptions`, which was somewhat backwards. While at it, also removing an
  intermediate variable that wasn't needed.

registry: remove dependency on rootlesskit, add SetCertsDir()
The registry package contained code to automatically set the CertsDir() path,
based on wether or not the daemon was running in rootlessmode. In doing so,
it made use of the `pkg/rootless.RunningWithRootlessKit()` utility.

A recent change in de6732a403 added additional
functionality in the `pkg/rootless` package, introducing a dependency on
`github.com/rootless-containers/rootlesskit`. Unfortunately, the extra
dependency also made its way into the docker cli, which also uses the
registry package.

This patch introduces a new `SetCertsDir()` function, which allows
the default certs-directory to be overridden, and updates the daemon
to configure this location during startup.

3518383ed9 dockerd: fix rootless detection (alternative to #39024)
The `--rootless` flag had a couple of issues:
* #38702: euid=0, $USER="root" but no access to cgroup ("rootful" Docker in rootless Docker)
* #39009: euid=0 but $USER="docker" (rootful boot2docker)

To fix #38702, XDG dirs are ignored as in rootful Docker, unless the
dockerd is directly running under RootlessKit namespaces.

RootlessKit detection is implemented by checking whether `$ROOTLESSKIT_STATE_DIR` is set.

To fix #39009, the non-robust `$USER` check is now completely removed.

The entire logic can be illustrated as follows:

```
withRootlessKit := getenv("ROOTLESSKIT_STATE_DIR")
rootlessMode := withRootlessKit || cliFlag("--rootless")
honorXDG := withRootlessKit
useRootlessKitDockerProxy := withRootlessKit
removeCgroupSpec := rootlessMode
adjustOOMScoreAdj := rootlessMode
```

Close #39024
Fix #38702 #39009

Please refer to `docs/rootless.md`.

TLDR:
 * Make sure `/etc/subuid` and `/etc/subgid` contain the entry for you
 * `dockerd-rootless.sh --experimental`
 * `docker -H unix://$XDG_RUNTIME_DIR/docker.sock run ...`

Configure log-format earlier, and small refactor
Some messages are logged before the logrus format was set,
therefore resulting in inconsistent log-message formatting
during startup;

195919d9d6 builder: set buildkit's exported product variable via PRODUCT
This introduces a PRODUCT environment variable that is used to set a constant
at dockerversion.ProductName.

That is then used to set BuildKit's ExportedProduct variable in order to show
useful error messages to users when a certain version of the product doesn't
support a BuildKit feature.

Remove cli/flags package
- Moving the `common*.go` files in `cmd/dockerd` directly (it's the
  only place it's getting used)
- Rename `cli/flags` to `cli/config` because it's the only thing left
  in that package 👼

Now, `integration-cli` does *truly* not depend on `cobra` stuff.

None of the daemon flags use a constant for the

Also removes a FIXME, that was now in the wrong

without a lot of context (and probably no longer really relevant).
